These are as important in our quality control as they are in our employee welfare and the net result is the excellent quality of service and product that we deliver our customers.

Our philosophy on Quality

Quality is paramount at Kookaburra. We have a highly experienced Quality Assurance team on hand which monitors all of our production processed on an ongoing basis. All of our production runs are 100% inspected at three points during the process. In addition we conduct sieve analysis every 30 minutes and have a strict testing regime involving micro analysis and environmental swabbing to ensure that our product is pure and of the highest quality. We conduct daily and weekly taste panels to ensure that our chicken has the home cooked flavour and texture on which we pride ourselves. We have the highest category A listing from EFSIS.EFSIS is an independent inspection and certification service, providing retailers, manufacturers, farmers and caterers, throughout the world, with expert inspection and certification of their operations to ensure only the highest standards are maintained. We are also approved to supply to supermarket chains such as Tesco, Asda, Waitrose, Sainsbury and Morrisons and are also members of the Campden Food Research Association, one of the industry’s largest food R&D associations, who work with us in keeping abreast of consumer and industry trends . Our processes allow us to hand-craft any size or type of chicken, stripped, diced and portion from whole birds which might be required by our customers catering for virtually any specification. Our team have many years experience within food production and can advise customers on which type of cooking or which size of cut would work best with certain recipes.

Our philosophy on process

At Kookaburra we produce and cook premium poultry products including breast fillets and calibrated products, which can be supplied whole, diced, sliced or shredded according to individual customer specification.

We are unique in that we are the only company to cook whole birds rather than portions. We have found that cooking the whole bird ensures a better flavour and more succulent meat. The standard cooked portions offered by other companies are often denser as the fibres shrink during the cooking process, resulting in a tougher and drier meat and so a multitude of additives and flavour enhancers are added in an attempt to recapture succulence and tenderness

By cooking the whole bird, the meat is held on the skeleton and the fibres remain extended during cooking, giving a lighter, moister, and more succulent finish – just as though you had cooked it in your own oven at home.

We have 8 cooking vats, 3 steam ovens and 1 Double D Roasting oven which is capable of cooking 800 birds at a time. Our 2400 square ft factory can handle up to 90 tonnes per week and we are able to adjust our shift patterns to accommodate 24 hour production as and when required.

The industry standard for poultry cooking is to ensure a time of less than 4 hours from hot to chilled. The Kookaburra process achieves this process, from oven hot to below 5°C in just one hour, ensuring fresher and more succulent chicken for our customers.

Our bespoke IT system enables us to have instant data retrieval. Our staff or customers can receive an email within a few minutes with details of traceability, Key Performance Indicators, analysis reports or any other information they may require on the product they have bought. We take our quality and production systems very seriously; we are constantly monitoring and improving our processes in order to provide the best possible service to our customers.

Our philosophy on Suppliers

Kookaburra Ltd firmly supports UK farmers and place high importance on provenance and traceability. We source as much of our poultry as possible from a small number of British farms, with whom we have excellent and longstanding relationships. They support our philosophies of high quality and humane farming and work with us to develop better products for our customers. We believe that British poultry tastes better than poultry from Brazil or Thailand, which is used by many of our competitors. We also support the Food Miles campaign which calls for producers to use locally sourced ingredients, to ensure that the food is in transit and storage for the minimum possible time before reaching the customer. Less food miles, from farm to plate, also ensures that we use less fuel in the process, which means less pollution. Our suppliers are all members of the Assured Chicken Production Scheme. The ACP is an independently assessed assurance scheme designed to deliver confidence to the

consumer. Standards have been written to include best practice in food safety, bird health, welfare and traceability.

Our philosophy on Customer Care

At Kookaburra our business is driven by our customers expectations. We work closely with our customers and encourage communication at many levels. Our technical department frequently works with the technical department of our customers, to ensure that we provide exactly what is required.

Our electronic ordering system ensures a very quick turnaround. We aim to get product samples out to customers within 24 hours and work with you to ensure that we help you meet your deadlines.

Our team are experts in the field of poultry production and processing and are always on hand to offer advice or technical information.

Our philosophy on Employee Welfare

At Kookaburra we like to look after our 160 staff. Many of our team have been with us for over 10 years and consequently we have a huge amount of industry knowledge at our fingertips, from production to customer service.

Most of our management team have been promoted from within and we encourage our staff to make the most of our personal development policy, which encompasses everything from literacy and numeracy, NVQ 1 and 2 through to business degrees.

We are extremely proud of our workforce and believe that between us, we probably have the most poultry processing experience of any company in the UK.

Our philosophy on Recycling

At Kookaburra Ltd we recycle all of our cardboard and plastic. We are careful to minimise waste wherever possible and encourage our team to be environmentally aware.
