The Kookaburra factory facility boasts an excellent workforce, superb high-yield production capacity together with an unrivalled excellence in the pursuit of quality through ongoing research and development and investment in technology and in our staff.

Factory Size

Our 2400 square foot factory is located in Peterlee, in the North East of England. We have capacity to handle 90 tonnes of production per week and have the flexibility to change our shift pattern at short notice, to encompass 24 hour production.

Our work force

We have 160 members of staff within Kookaburra. Many of our team have been with us for over 10 years and have an unrivalled amount of industry knowledge between them.

We believe in promoting from within and most of our management team are proud to say that they have worked their way up from the shop floor.

Research and Development

We pride ourselves on our research and development facility. Our excellent team are constantly working to produce new and better ways of cooking our chicken to ensure that it is as close to home-cooked as possible.

We work closely with our customers and suppliers to develop new products and strive to offer the widest possible variety of flavours and recipes.

We are experts in our field and are happy to share our expertise with our customers.

Investment

A significant investment in excess of £5,000,000 has been made in factory improvements, with the latest £250,000 including:
  • The re-design of our 2 main cooking systems to give separate process flows from raw to high risk post chilling
  • Additional equipment in our roasting/cooking facility has achieved increased capacity and cooking efficiency.
  • The installation of a reverse osmosis system to improve steam efficiency
  • We upgraded our chilling at the post cook stage for boneless meat and roasted chickens, giving greater temperature security
  • The re-fabrication of walls and floors surrounding our oven installation, along with structural alterations to improve our cooking and chill rooms
  • The relocation of stock and fat producing facilities to a new, purpose-built facility.

Delivery / Transport

We use a third party distribution company to deliver our products to customers and can deliver our produce anywhere in the UK within 24 hours

Process

All of our chilling and freezing equipment has been specifically designed to allow easy cleaning. Our state of the art chillers are able to chill our products from oven hot to below 5°C in one hour – the industry standard requirement is 4 hours.

Our chilled air handling units help to maintain a constant, chilled atmosphere within the factory. 2 micron prefilters and 0.6 micron hepa filters guarantee a clean and dust free atmosphere.

Production and storage

We have a capacity of 90 tonnes per week and are able to change our shift patterns to enable 24 hour production if required. We have our own onsite holding freezer in which orders are stored for the short time while waiting for our delivery company.
